A Look at the History of Pickles
How the popular snack got started thousands of years ago.
Pickles may be a well known food today, but did you know that people have been enjoying these crispy and crunchy treats for thousands of years? Let’s take a look back at the history of the pickle to see how it got started on its journey to the food it’s become today.
Archaeologists and anthropologists believe that the process of pickling began as early as 2400 B.C. Mentioned twice in the bible, cucumbers were used more than 3,000 years ago in western Asia, Egypt and Greece. Ancient sources even note that Cleopatra attributed her good looks to a daily diet of pickles.
In the Middle Ages, pickles were a popular snack for historic figures such as Queen Elizabeth and Shakespeare. The snack arrived in the New World thanks to Christopher Columbus, who grew cucumbers on the island of Haiti specifically for the purpose of pickling.
In the U.S., the area that is now New York City was a popular spot for Dutch food pioneers during the 16th century. At the time, the city was home to the largest number of commercial pickle producers. About a hundred years later, Dutch farmers in New York grew pickles in the area we now know as Brooklyn. The cucumber crops were then sold to a number of dealers who cured them in large barrels with a variety of flavored brines and sold them at stands along the street.
With the creation of the “boiling water bath” by Nicholas Appert in 1809 and development of the mason jar in 1858, home and commercial pickling and preservation were set to take off to new heights. Over the next century, many of the big name pickle producers, such as Heinz, Mount Olive and Vlasic, began their commercial operations.
Pickles continue to be a common snack today, whether store bought or homemade. Delis, farm markets and country stores are some of the most popular places to enjoy a fresh pickle straight from the barrel. Many restaurants garnish their plates with pickles, whether the order is a sandwich and chips or a burger and fries.
