Looking for a great springtime salad? This beautiful beet salad is made with fresh spinach, Jake & Amos Sweet Baby Beets, goat cheese, pistachios, red onion, and orange slices. You can top it off with a simple citrus dressing. The perfect recipe for warmer weather, especially when you can enjoy the fresh air again.

Serve before dinner or alone as a light lunch option. This salad is a great mix of spring flavors!

Ingredients:

For the salad:

6 cups spinach

1 jar Jake & Amos Pickled Sweet Baby Beets

2 oranges, peeled and cut into segments

4 ounces crumbled goat cheese

1/2 cup pistachios, could also substitute another kind of nut, like pecans or almonds

1/2 cup sliced red onion

Kosher salt, to taste

Black pepper, to taste

Olive oil, drizzled on top

Fresh mint for garnish, optional

For the dressing:

2 tablespoons fresh orange juice

2 tablespoons fresh lemon juice

1/4 cup oil oil

1/2 teaspoon Dijon mustard

2 teaspoons honey

1 tablespoon white balsamic vinegar

Kosher salt, to taste

Black pepper, to taste

Directions:
  1. Wash spinach and let dry.

  2. Drain Jake & Amos Pickled Sweet Baby Beets and cut into thick wedges. Season with salt and pepper, set aside.

  3. Mix dressing. Whisk together orange and lemon juice, olive oil, honey, Dijon mustard, vinegar, pepper, and salt. Let stand for 15 minutes before putting on salad.

  4. Assemble the salad. Place spinach in a large bowl. Top with Jake & Amos Pickled Sweet Baby Beets, red onion, oranges, nuts, and goat cheese. Garnish with fresh mint.

  5. Drizzle dressing on salad and toss. Serve immediately.
