Beet, Spinach & Citrus Salad

Looking for a great springtime salad? This beautiful beet salad is made with fresh spinach, Jake & Amos Sweet Baby Beets, goat cheese, pistachios, red onion, and orange slices. You can top it off with a simple citrus dressing. The perfect recipe for warmer weather, especially when you can enjoy the fresh air again.
Serve before dinner or alone as a light lunch option. This salad is a great mix of spring flavors!
Ingredients:
For the salad:
6 cups spinach
1 jar Jake & Amos Pickled Sweet Baby Beets
2 oranges, peeled and cut into segments
4 ounces crumbled goat cheese
1/2 cup pistachios, could also substitute another kind of nut, like pecans or almonds
1/2 cup sliced red onion
Kosher salt, to taste
Black pepper, to taste
Olive oil, drizzled on top
Fresh mint for garnish, optional
For the dressing:
2 tablespoons fresh orange juice
2 tablespoons fresh lemon juice
1/4 cup oil oil
1/2 teaspoon Dijon mustard
2 teaspoons honey
1 tablespoon white balsamic vinegar
Kosher salt, to taste
Black pepper, to taste
Directions:
- Wash spinach and let dry.
- Drain Jake & Amos Pickled Sweet Baby Beets and cut into thick wedges. Season with salt and pepper, set aside.
- Mix dressing. Whisk together orange and lemon juice, olive oil, honey, Dijon mustard, vinegar, pepper, and salt. Let stand for 15 minutes before putting on salad.
- Assemble the salad. Place spinach in a large bowl. Top with Jake & Amos Pickled Sweet Baby Beets, red onion, oranges, nuts, and goat cheese. Garnish with fresh mint.
- Drizzle dressing on salad and toss. Serve immediately.
