Instructions
Dipping Sauce -
Prep the dipping sauce by combining the mayonnaise, sweet pickle relish, brown mustard, white vinegar, paprika, onion powder, garlic powder, and pepper in a medium bowl. Let it rest in the fridge for 1 hour while you prep the rest of the dish.
Burgers -
- Mix the ground beef, paprika, garlic powder, salt, pepper, onion powder, and light brown sugar in a large bowl.
- Place the meat mixture between two large pieces of parchment paper and roll it out into an 8x8 square. Then use a pizza cutter to cut the meat into 1-inch squares.
- Or form small 1-inch patties by hand.
- Add 1 teaspoon of olive oil to a large nonstick pan on medium heat.
- Cook the beef squares for 2-3 minutes per side. Add a slice of cheese to each patty just before removing them from the pan to allow it to melt slightly.
- Cool the mini burger patties for about three minutes.
Skewers -
- Top each burger with lettuce, lime pickles, and onion. Then press a skewer through the stack to secure them.
- Serve with the dipping sauce on the side or drizzle on top of the skewers.
