Sweet Summer Rind Relish

Ingredients:
1 1/2 cups Jake & Amos Watermelon Rind, finely minced
1/2 cup sweet Vidalia onion, finely minced
1/2 cup red bell pepper, finely minced
1 Tablespoon fresh jalapeño, seeded and minced, optional
1 Tablespoon apple cider vinegar
1/4 teaspoon celery seed
tiny pinch of salt
Directions:
1. Chop finely: take your time mincing the Jake & Amos Watermelon Rind, sweet onion and red bell pepper so they are all a uniform, classic relish size.
2. Combine: in a medium bowl, stir the minced watermelon rind, onion, red bell pepper and jalapeño, if using, together.
3. Balance the sweetness: splash in the apple cider vinegar, then stir in the celery seed and a small pinch of salt to wake up the fresh flavors.
4. Marinate: let the relish sit in the fridge for at least 30 minutes before serving so the onions and peppers soften slightly in the sweet pickled juices.
5. Serve chilled or at room temperature over grilled hot dogs, burgers, chicken, sausage or vegetables.
